The scent of mimosa is delicately powdery, deliciously honeyed, rich, and slightly green. It is an integral part of the winter landscape of southern France. These small, golden, velvety berries are very fragile and need to be treated quickly to preserve their fragrance. Mimosa plants were brought back from Mexico to France by the troops of Napoleon III.
